Day-old bread is the secret here. Slightly dry brioche or challah soaks up the cinnamon custard without falling apart, so every slice stays soft in the middle and golden outside.
The quick blueberry sauce simmers while the toast cooks. Make it with fresh berries in summer or frozen ones the rest of the year.
Tips for Success
- Fresh bread is too soft. If yours is fresh, dry the slices in a 300°F oven for 8 minutes first.
- For a lighter version, use 2% milk and whole-grain bread.
Blueberry French Toast
Ingredients
Instructions
Warm the oven to 200°F and set a baking sheet inside to keep finished slices warm.
Whisk the eggs, milk, vanilla, cinnamon, sugar and salt in a shallow dish until smooth.
Add the blueberries, maple syrup and lemon zest to a small saucepan. Simmer over medium heat for 6 to 8 minutes, stirring now and then, until the berries burst and the sauce thickens slightly.
Heat a large nonstick skillet over medium heat and melt about 1/2 tablespoon of butter.
Dip each slice of bread in the custard for about 10 seconds per side. Let the extra drip off.
Cook 2 to 3 slices at a time for 2 to 3 minutes per side, until deep golden. Move to the warm oven and repeat with the remaining butter and bread.
Serve topped with the warm blueberry sauce and a dusting of powdered sugar.
