Toast topped with a halved soft-boiled egg and vegetables

Published October 18, 2026 by the Cozy Recipe Kitchen

A perfect soft-boiled egg has a set white and a golden, jammy yolk. The trick is timing: six and a half minutes in gently boiling water, then straight into ice water.

The fresh herb dressing takes two minutes and turns a simple toast into something you would happily order at a café.

Tips for Success

  • Eggs straight from the fridge work best with this timing.
  • Older eggs (a week or so) are easier to peel than very fresh ones.

Ingredients

Instructions

  1. Bring a small pot of water to a gentle boil. Fill a bowl with ice water.

  2. Lower the eggs into the water with a spoon and cook for 6 1/2 minutes. Move them to the ice water for 2 minutes, then peel.

  3. While the eggs cook, whisk the olive oil, parsley, chives, Dijon, 1 teaspoon lemon juice and a pinch of salt.

  4. Toast the bread until crisp.

  5. Mash the avocado with the remaining lemon juice, salt and pepper. Spread it over the toast.

  6. Halve the eggs, set them on top and spoon over the herb dressing. Finish with greens and red pepper flakes.

StorageRefrigerate leftovers in an airtight container within 2 hours of cooking and enjoy within 3 to 4 days.
